What does self-defined mean?

To nominate yourself for one of these five roles, the process requires you to self-define as belonging to that group.  Self-definition means ‘the definition of one’s identity, character, abilities and attitudes by oneself’. So by nominating yourself as Disabled Students Officer, for example, you self-define yourself as having a disability.
