Budget Friendly Meal - Golden Syrup Broccoli Noodles

Looking for a quick vegan noodle dish? This recipe is perfect for a weekday dinner when you want flavour, speed and a budget friendly meal! 

 

The Ingredients

  • 1 nest of dried wholewheat noodles 

  • A few stems of long-stem broccoli 

  • 2 tbsp sesame oil 

  • 1 garlic clove, crushed 

  • A pinch of dried chilli flakes

  • 1 tbsp golden syrup 

  • 1 tbsp soy sauce 

  • ¼ lime (juice)

Nutrition: per serving: ~418 kcal; 16 g fat (3 g saturates); 54 g carbs; 21 g sugars; 8 g fibre; 11 g protein; 2.55 g salt.

 

The Method

  1. Bring a pan of salted water to the boil and cook the noodles following the packet instructions. 
  2. Meanwhile, in a frying pan heated with a splash of sesame oil, pan-fry the broccoli for a couple of minutes. Then add the crushed garlic and chilli flakes; fry for another minute or two. 
  3. Add the golden syrup, soy sauce, 1 tbsp sesame oil, a squeeze of lime juice, some cracked black pepper and 1 tbsp of the noodle cooking water. Simmer for a couple of minutes. 
  4. Drain the noodles, add them to the pan with the sauce & broccoli, stir to combine, and serve.

Want to add to it? You could add some more veggies, or protein to make it your own.
